VietNamese Sausage Egg Pizza

Now that Christmas is over, I am looking forward to some fast and easy home cook meals. One exciting day the kids and I made Vietnamese Sausage Egg Pizza for breakfast.

We took these photos with my son's iPhone. I am starting to get used to the idea of the camera and phone all in one.  I like that two in one means one less gadget to carry and remember where it is.





Cooking is a great way to spend time with the family. We talked about the different tactics we saved Christmas shopping this year. For me it was stress free and feel good kind of shopping. I shopped online so no looking for parking space or freezing in the rain and cold.

And now on with our featured Vietnamese Sausage Egg Pizza recipe.

Ingredients: 3 Vietnamese sausages, cut and sliced into 1/8 of and inch width. 6 eggs, green onions cut into 1/4 inch width, salt and pepper.

Preparation: Whisk the eggs, salt and pepper together. Drop the 1/8 inch thick sausages into a medium size pan and let it cook on low. Once the fat is drained from the sausages pour the whisked eggs onto the sausages and cover it entirely. Cover the pan with its lid for a couple of minutes and then garnish with the green onions.
As far as the Vietnamese Sausages are concerned, there are different kinds. And since the English language doesn't have name for these food, most Vietnamese call these guys sausages.

In my post Noodles Tossed with Egg and Sausage Strips, this type of sausage is made of ground pork puree into a paste and used like ham or cold cuts. The difference is that the pork sausages are cooked. We used the same type of sausage in Banh Beo - Rice Patties Topped with Shrimp & Sausage. a dish prepared by IcyBC when Self Sagacity Visits  in July on Our Departure From SJC - and the Undesirable Airlines Services to Michigan.

But I consider the sausage package pictured here is much more deserving to be called "sausages" than the sausage / ham mentioned in the Noodles Tossed with Egg and Sausage Strips post. Thus, these sausages are used in another one of my recipes called Friday Sticky Rice and African Violet, a dish that would not be the same without these sausages.
