Seafood is great for  salads. And one of the most tasty seafood is cuttlefish or calamari. I like most kinds of squid, calamari, or cuttlefish. The only ones I don't like is the cuttlefish with very thick tentacles.
When you look at this salad what do you see? Lots of greens, onions and herbs. There is no other fattening, high calorie ingredients in this dish -  except maybe the cuttlefish itself.

It is super easy to prepare this dish. Just steam the cuttlefish, and cut the cuttlefish into 1 inch widths and it mix- in with the greens.




The herbs / veggies can include:

  • Yellow onion, green onion, red onion, red chili, cilantro and other herbs: Vietnamese coriander, fish mint and peppermint, ginger, garlic. 
  • Salt, pepper, fish sauce, olive oil.

Steamed calamari can be so delicious if cooked right. I buy small squids, or cuttlefish. Sometimes I can find them already cleaned. Most times, I feel lucky enough to just find them frozen and fresh looking. I look for packages that have white, cleaned cuttlefish with the tentacles.

The typical dressing includes: fish sauce, lime juice, rice vinegar, sugar, olive oil
[1,1,1 = 4 table spoons of fish sauce, 4 table spoons of lime juice or 2/2 lime juice and vinegar, 4 table spoons of sugar. Cut down the sugar if you don't like the sauce too sweet]
