10 Tasty Family Favorite Chicken Recipes



Lunches, snacks or dinners are going to be so easy now with the Old El Paso meal kits. I am so excited to add the following wonderful Old El Paso Mexican Chicken recipes to my quick and easy meal plans!
I had but only a few family favorite chicken recipes that I cook over and over again. And just as I suspected there'll come a day when the family will also realize that mom’s chicken menu isn’t very diverse. So a comment last week from MattLove, teenage son, got me on a mission: “Mom, can you prepare other chicken dishes?...I mean, not what you normally cook.”
If you know me, I take my cooking way too seriously.  But no lie. Once in a while even super moms need help. Lately, I have been trying out the different meal kits and the Old El Paso Mexican Chicken recipes from their website. And almost instantly, I've earned the super mom award again! It goes to show, a good meal is the way to a teenage boy's heart, or anyone really.

I am still excited as I am writing this because I there are so many great, great recipes and dishes to share. The meal kits simplified my preparation for weeknight dinners. They also allowed me to plan in advance so I don't have to stressed about what to cook.

Listed below are my 10 Tasty Family Favorite Chicken Recipes. You can find them all on the Old El Paso website. I also picked two recipes that are just out of this world to me share: Mexican chicken and lime fajita burgers, and Spicy mexican rice with chicken and prawns.  I hope you'll try one or some and let me know what you think!

10 Tasty Family Favorite Chicken Recipes

Old El Paso meal kits
1. Crispy chicken fajitas 
Crispy chicken strips with sour cream, juicy tomatoes, crunchy lettuce and our Old El Paso Thick ‘n’ Chunky Salsa.

2. Mexican spiced chicken tomato and rice salad 
A zingy rice salad with succulent chicken, colourful veg, tangy salsa and vibrant fresh herbs.


3. Mexican chicken and lime fajita burgers 
Chicken with fresh herbs and Mexican spices, rolled into mini burgers and stuffed into folded tortillas – they’re little pockets of taste! Serves 4 Mild

Ingredients:  1 x Old El Paso Original Smoky BBQ Fajita Dinner Kit. 500g minced chicken or turkey. 1 x lime, Grated zest ½ small onion, very finely chopped ½ lime, juiced. A handful of freshly chopped coriander. A little oil. Shredded crispy lettuce. Guacamole to serve Kit contains: 8 x Old El Paso Soft Flour Tortillas. 1 x Old El Paso Original Smoky BBQ Fajita Spice Mix,
1 x Old El Paso Original Salsa

 Instructions: 1. In a large bowl, throw in the mince, onion, coriander, Old El Paso Original Smoky BBQ Fajita Spice Mix, lime zest and juice. Mix well then use your hands to make 8 little balls, and then flatten them into 8 small burgers. 2. Brush each burger with a little oil, then cook under a preheated grill or on a barbecue for 5-6 minutes each side until thoroughly cooked through. 3. Griddle or BBQ the Old El Paso Soft Flour Tortillas for 20 seconds on each side, or following to the instructions on the pack. Make it your way Fold an Old El Paso Soft Flour Tortillas in half, then in half again to make a little triangle with a pocket. Stuff with lettuce, pop in a burger and top with Old El Paso Original Salsa and guacamole. This recipe makes 8 mini burgers, so help yourself to another one! Cooks Tips This recipe works just as well with lean pork or beef mince instead of chicken or turkey!


4. Chicken,lime and coriander nachos
Crispy Nachips with chunks of spiced chicken and juicy peppers topped off with lime, coriander and melted cheese – just waiting for someone dig in!



5. Extra Mild Super Tasty One Pan Rice Meal
Quick & easy to prepare, this is the perfect all-in-one meal for the whole family & without the heat thanks to this extra mild, super tasty recipe, flavorful seasoned rice, tender chicken and your choice of vegetables, simmered in a delicious creamy lime stir in sauce.


6. Spicy chicken and courgette fajitas
Succulent strips of chicken, onion, peppers and courgettes in a spicy tomato and pepper sauce.

Spicy mexican rice with chicken and prawns
Spicy rice with chunks of chicken, pepper, jalapenos and tiger prawns, garnished with coriander. Serves 4 Mild

Ingredients 1 x packet Old El Paso Spice Mix for Original Smoky BBQ Fajitas.  1 x jar Old El Paso Hot & Tangy Jalapenos, drained.  450ml hot chicken stock.  240g cooked peeled Tiger prawns. 225g easy cook long grain rice.  4 skinless chicken breasts, cubed. 1 x can chopped tomatoes. 1 x onion, chopped. 1 x red and green pepper, deseeded and cubed. 1tbsp sunflower oil.  A handful of chopped coriander Instructions

 1. Heat the oil in a large pan; chuck in the chicken and onion, cook for 3-4 minutes until the chicken is lightly browned. 2. Throw in the rice and stir until coated in the oil, then add the Old El Paso Spice Mix for Smoky BBQ Fajitas stirring until the ingredients are coated in the spices. 3. Add the tomatoes and stock. Cover and simmer for 15 minutes, stirring occasionally. 4. Throw in the peppers and cook, covered for a further 5 minutes, then stir in the prawns and jalapenos and cook for a further 5 minutes, until the rice is tender and most of the liquid has been absorbed. Make it your way Serve garnished with coriander. Cooks Tips Add some chopped chorizo when cooking the chicken and onions for extra paprika flavour.


Spicy-rice-and-chicken-enchiladas
Spicy succulent strips of chicken, onion and peppers mixed with sweetcorn, rice and cheese served in a warm tortilla.



Tangy chicken wings and drumsticks Succulent
Golden chicken wings and drumsticks, coated in a deliciously sticky, tangy salsa.

  9. That rice with chicken and shrimp looks amazing! And who doesn't like fajitas? They are delicious and nutritious for you as long as you go easy on the sour cream. I usually just use guacamole and some hot sauce!
