Cook Butternut Squash with Garlic

Butternut squash is easy to grow and easy to cook. Here you can see my butternut squash leaves and blooms happily in a large pot. It remains healthy and yielded many squashes in a short period of time.
If you ever wonder how to cook butternut squash, it is simply delicious just by adding garlic and parsley, see instructions below.

Some of Butternut's noted nutritional Values are: Low in fat, loads of dietary fiber and potassium. It is a heart-friendly choice.

* 2 tablespoons minced fresh parsley
* 2 tablespoons olive oil
* 2 garlic cloves, minced
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes

In a large skillet, combine the oil, garlic, salt and pepper. Cook until garlic is brown, add squash and toss to until tender. Add parsley. Don't over cook but use the cover to keep heat in the last five minutes.
