Glass Noodles Seafood Salad
As I am planning my holiday meals, I am spilling my weakness. Glass Noodles Seafood Salad, known as Yum Woon Sen is one of my favorite dishes. I am greedy when it comes to sharing this dish, I devour it like I breathe the air. So don't ever share this dish with be, because you will end up hungry. I have had it over and over and for years and not even once am I sick of it. I only have a few favorite dishes, and none is easy to duplicate. Therefore, I must drive to the one restaurant that makes this dish hands down perfect - no matter how far it is.
Seafood is my favorite food. I eat so much shellfish that you would think I will eventually turn into a shrimp or a crab one day. The dish pictured here has the perfect combination of most everything I love. I prefer my seafood steamed or boiled and never fried. This dish is a combination of cuttlefish or squid, minced chicken, shrimp, glass like vermicelli noodles, and lots of greens and onions. And glass noodles, or vermicelli. Vermicelli or glass noodles is my favorite type of noodle, not only it the best noodle for you, it looks very appealing. Though it is hard to find a good brand that won't mush, break, or swell too big.
Glass Noodles Seafood Salad is tangy, spicy, and delicious! I don’t know what the name of the brown sauce is between the glass noodles, but I think it is the magic ingredient! When I asked they said it was sweet chili paste, well, I couldn't find it in the super market anywhere. But I think it is sweet tamarind paste.
Glass Noodles Seafood Salad RecipeIngredients
8-10 shrimps peeled and deveined
2 big squids, cut into pieces and scored
1/4 cup of minced pork cooked and lightly seasoned
1 bundle of green onion, sliced
1 handful coriander leaves, chopped
1/4 cup of peppermint leaves
6 fungus, black mushroom sliced thin
1 cups (250ml) unsalted roasted peanuts
2 birds eye chillies, chopped
3 tlbs fish sauce
3 tlbs lime juice
2 tsp sugar
3 cups (750ml) water
1 package of glass noodles, soaked in cool water for about 10 minutes
2 tablespoons of roasted chopped peanuts
How to Make Clear Glass Noodles Seafood SaladPreparation
Bring the water to the boil in a saucepan, then add your prawns and cook for 2-3 minutes until they turn pink. Remove the prawns and set aside.
Add the sliced scored squids and cook for about 4-5 minutes. Remove the squids and set aside.
Add the soaked glass noodles to the water, cook for 30 seconds and remove.
Dressing: Mix the fish sauce, lime juice, chili and sugar, and stir well. If you like more sauce just double the ingredients and use to taste.
Put the noodles, prawns, squid, minced pork, onions, and mushrooms into a bowl, pour over the dressing and mix everything together.
Add a couple of tablespoons of the reserved cooking liquid and the peanuts, then mix again.
Serving: to finish off the plate and make it look like the restaurant. Add the items below to the corner of the plate.

a few red cabbage slices
