Chayote Stir Fry with Tomatoes and Cilantro



Feeling like some crunchy vegetables? Chayote is one of those vegetables that can be cooked crunchy or soft and still tastes yummy. One of the amazing thing about chayote is that it can be kept longer in the refrigerator that some other vegetables. 
Sometimes, I just don't want any meat, but at the same time, I want something tasty. So if I can prepare a dish that is light with lots of flavor and great taste, that would be divine!

Like I said chayote is a flexible vegetable that can be cook in soup or stir fry. The way I love it is stir fry. Add some chopped tomatoes, cilantro and red onions, and green leaf onions and you'll have a wonderful tasty vegetarian dish.

  1. It looks so tasty, but I'd leave out the cilantro. I think that's one herb you either love or hate, and it just never grew on me like others.
