Slow Cooked Chicken with Veggies

Chicken is incredibly easy to prepare and can be cooked so many different ways. It is very good as left over too, which is a real plus. Today's dish is one you can be proud to prepare on that day your fridge needs a clean up. You know those days when you're ready to go grocery but still have too many little of this and that? When you find yourself in this predicament, remember the Slow Cooked Chicken with Veggies dish.
Ingredients:
Fire roasted red peppers, Potatoes, red onion, mushrooms, cilantro, lemon peel, chicken any (used here: thighs, drumstick). Salt, pepper, olive oil, soya sauce.

Preparation: 1) Seasoned the chicken with salt and pepper in a medium pot with 1 tablespoon of olive oil. Keep the heat on high to brown the chicken a bit, then turn the heat down to low. 2) Slow cook the chicken for 10 minutes then add potatoes, onions, and all the tougher veggies. 3) Add a tablespoon of soya sauce and stir ingredients well. 4) Cook on low until potatoes is softer, then the rest of your desire veggies, red pepper, and mushrooms as shown here. 5) Garnish with cilantro, and lemon skin peels.
