JackFruit and Pink Jelly

This delicious desert is famous in my household. Very light, and mostly consist of fruits and jelly. The boys like it, and that's important because they will eat it. Sometimes it is hard to know what will be a hit. Once in a while the hit becomes old news, and I am again having to come up with a different idea. Although this desert has been around for quite awhile and I hope it remains around for a long time.



This desert, let's call it JackFruit and Jelly, is made up of thinly sliced jack fruit strips and young coconut strips, coconut jelly, strawberry jelly, and logans. All the ingredients are mixed together in a pot and bring to a boil.
The combined ingredients are poured into a desert serving glass individually. Then the last ingredient, which is the coconut milk, will be spooned in slowly. Now this desert is ready to be served with shaved ice. Have you had your fruits today?

    It lok very yummy, but can you substitute the jack fruit for anything else? I cannot get it here in France...

  4. BirdCraft- Depending on your taste, but seaweed jelly or firm can grapes would taste great too. Just make sure what ever you substitute is firm. :-)

  10. oh my god....I remember jackfruit! We used to have a tree with that fruit, in our backyard! Come to think of it, we haven't eaten that in FOREVER!!!!! I miss that fruit!!!!! IT's really good!!!!!

  19. Three Rivers Michigan- Jackfruit is a fruit native to Southeast Asia. Spiky skin and very large, it is yellow inside and doesn't taste like any other fruits that I know. Thank you for your comments. I am glad I could bring a little something different to the memes we participated in. Have a good weekend.

  20. I love the fruits but without the coconut milk.. I am not a fan of it.. It helps to enrich the flavour but somehow it is just too strong for me..
